Mac’n’cheese ‘rogy

Made some homemade macaroni and cheese yesterday for lunch. Had some left over perogy dough. Bam! New perogy recipe. Carbs anyone?

Perogy Dough

Filling
  • 4 cups cooked macaroni
  • 2 tbsps olive oil
  • 1/2 cup minced sweet onion
  • 1/4 cup all purpose flour
  • 2 cups chicken broth
  • 4 cups shredded white old cheddar cheese
  • 1/4 cup breadcrumbs
  • pepper to season
Method
  • Cook macaroni in salted boiling water.
  • While the macaroni is cooking, heat the oil on medium heat in a sauce pan. Add the minced onion to the heated oil.
  • Once the onion has slightly browned, add the flour, stiring it in well.
  • Little by little, add the 2 cups of chicken broth to onion and flour mixture, stirring all as the mixture thickens.
  • Once thickened, turn heat to low and add the 4 cups of shredded cheese.
  • Season with pepper  and add the breadcrumbs( I purposely did  not season with salt as the broth has added salt and the cheese is quite salty, but go ahead and season to your liking).
  • Let filling cool before handling to make perigees.
  • Once perogies are filled, cook in salted boiling water for 4 minutes or so then transfer to an oiled frying pan, cooking until golden brown.
  • Serve perogies as they are or along a nice big salad!
